Can I use a CC# to lower gain on a preset to clean up the amp? I have a JCM800 patch I absolutely love but would like to use an instant access switch to lower the gain for cleaner passages. Is this doable?

The answer is yes and CC#13 controls the gain

Look under "midi" and you'll find a separate list with all of the controllers available for each amp.
